Healthy Peanut Butter Cups

If you are looking for a way to indulge without the guilt, this is the recipe for you! Tastes JUST like a Reese's Peanut Butter Cup, except healthy. ;)


Healthy Peanut Butter Cups (serves 8)

Ingredients:

4 tbsp coconut oil
1-1/2 scoops (or approx. 8 tbsp) chocolate Shakeology (I use vegan chocolate)
3 tbsp all natural peanut butter (or almond butter if you prefer)


Directions:


  1. Melt 2 tbsp of coconut oil in microwave for approx. 30 seconds and add half portion Shakeology (3/4 scoop or approx. 4 tbsp).
  2. Mix coconut oil and Shakeology until it becomes a thin cake batter consistency. Then pour mixture in the bottom of each muffin tin mold until it completely coats the bottom of each. Freeze for 5 minutes.
  3. Remove from freezer and add peanut butter to each mold.
  4. Melt the remaining coconut oil and mix with Shakeology. Pour evenly over the top to cover each cup.
  5. Freeze for 5 more minutes.


VIOLA! Dessert is served!

Friday Night Pizza Alternative


These were a huge hit in the Lund house last week! Even my picky 6 year old didn't noticed I had swapped his regular crust for cauliflower. Ha!

Mini Cauliflower Mozzarella & Tomato Pizza

Ingredients:
  • 1 large head cauliflower (4 cups shredded)
  • 2 large eggs
  • 1½ cups shredded mozzarella cheese
  • 2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 3 teaspoons garlic powder
  • 3/4 cup pizza sauce
  • 12 fresh basil leaves
  • 1 tomato, sliced into 12 rounds
  • ¼ cup finely shredded Parmesan cheese
  • 2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 3 teaspoons garlic powder


Directions:

1. Using a food processor, shred cauliflower into small crumbles.

2. Cook cauliflower in microwave in a large microwave-safe bowl for 8 minutes. Allow to cool for 8-10 minutes.

3. Preheat oven to 450°F.

4. In large bowl combine cooled cauliflower, eggs, 3/4 cup shredded mozzarella cheese, oregano, basil and garlic powder and stir to combine.

5. Lightly grease 2 baking sheets and divide mixture into 12 balls. Place balls on baking sheets and pat each into a thin round about 3-4 inches wide. Bake in oven 15 minutes until golden brown (you will notice the edges are slightly charred but that is OK).

6. Remove baking sheets from the oven and turn on broiler to HI. Top each mini crust with pizza sauce, remaining mozzarella, basil leaves, Parmesan cheeses and tomato slices.

7. Place under the broiler for about 5-6 minutes or until cheese is melted. Remove sheets from oven and allow to cool before serving.

Day 1 - Countdown to Summit!

Eeeeekkkk! Today I officially registered for our annual coach event Summit in Nashville!!!! The hubby and I will be doing LIVE workouts I will be doing with Chalene Johnson (PiYo) and Autumn Calabrese creator of my favorite workout 21 Day Fix & 21 Day Fix Extreme!!


I decided that in order to prepare for this event next month, I am going right along side my challengers in our current health / fitness support group! I am there to motivate them, but what they don't realize is how much they motivate me. <3

Today was tricky. A SUPER early 4AM alarm, full day of traveling, followed by meetings and the hour time change here in Oklahoma. Big thumbs down seeing as how I am exhausted but it's still light out and my body down't think it is bed time yet. lol

I didn't say this lifestyle was easy all the time. What I did say is that it is possible if you want it bad enough, just like anything in life. 

So I packed my snacks, Shakeo, and grabbed some fresh fruit at the airport. Then I went out to lunch AND dinner with colleagues. As much as I wanted to go for the chicken quesadilla at Chili's or a burger and onion rings at the local place we ate dinner, I stuck to the plan. Grilled Chicken salad for lunch and Tilapia with a half baked potato for dinner. --- insert pat on the back ;)

I did not take any pics of my food today for fear that my boss may get a little weirded out. I mean who takes pics of their food?? This girl, that's who! :p But I did track all of my containers on my handy little iPhone app. (They have something similar available on Android as well.) This is great to be sure you are eating enough and getting in all of your containers.

Confessions of a Busy Mom with LOTS of Excuses

So this went down today...

Vanilla Snow FroYo with Butterfinger and Hot Fudge!

As a coach people look to me to be their source of motivation, guidance, and support through their journey to live healthier lifestyles. Lately I have NOT been practicing what I preach. BUT I am human and realize falling off track is going to happen from time to time. So let me lay it all out there about what has gone on the last 3 weeks:


  • I have worked out less than 5 times.
  • I have eaten everything from cookies to pizza to fried macaroni & cheese (which is ridiculously amazing btw!).
  • I haven't meal prepped, which has turned into a LOT of eating out and spending over $150 last week! How quickly I forget how much we save by spending and hour or two a week meal prepping!
  • I have had a bit more than just my 1 or 2 glasses of wine each week. ;)


Along with all of the above, I have thrown around my share of excuses:


  • I really need that extra 30 minutes of sleep. Even though I know I would't be half as tired if I was getting my workouts in...oh the irony lol
  • I don't have time between my insane work schedule and the kids to squeeze in that 30 minutes to get my butt moving.
  • It's just one day, I will start fresh tomorrow.
  • We don't need to plan our meals, we'll figure it out each day. Which really meant..."What can we order in?"


SO if any of this sounds like you, don't beat yourself up over it. Instead make the decision to commit yourself to living healthy this week. Just DECIDE, it's that simple.

I am looking forward to working right along my challengers tomorrow in Day 1 of our new health & fitness support group! Sometimes you just need a little accountability, ya know?! If you ever do, feel free to reach out to me and we can do this TOGETHER.

Helpful tips:

  • Drink LOTS of H2O!! ---> Did you know you should be drinking half of your body weight in ounces in water every day?! Get to it!
  • 30 minutes of some sort of exercise DAILY.
  • Read or listen to personal development. If you aren't growing yourself each day, you are moving backwards. --- Think on that! ;)
  • Eat whole fresh foods that will FUEL your body. We eat to live, not live to eat!

Heating up the Kitchen with Spicy Shrimp Pasta!

Kicked up our dinner tonight with something I whipped together in less than 20 minutes. Gotta love a quick, healthy meal!

Spicy Shrimp Pasta (serves 2)

Ingredients

8 ounces shrimp
3 ounces whole wheat pasta
2 tomatoes, diced
1/3 cup all natural pasta sauce
1 tsp pepper
1 tsp garlic powder
1 tsp paprika
1/2 tsp cayenne pepper to taste
1/2 tsp oregano
cooking spray

Directions

Shrimp:
Heat skillet over medium heat. Coat the bottom of skillet with coconut oil or olive oil cooking spray. Arrange shrimp in a single layer in skillet. Sautée shrimp 2-3 minutes. Add pepper, paprika, garlic powder and cayenne to taste. Add tomatoes and pasta sauce to skillet. Let simmer on low for 3 minutes. Pour shrimp and sauce mixture over pasta. Sprinkle oregano over the top.




Pasta:
Bring large pot of water to a boil. Add whole wheat pasta and cook for 10-11 minutes. Drain and plate.

Mexican Stuffed Peppers

Ingredients:

  • 4 large Green Bell Peppers 
  • 1 medium Onion
  • 1 pound Ground Turkey
  • 1 cup Brown Rice (Optional)
  • non-stick cooking spray
  • 1/2 cup 2% Milk Mexican Shredded Cheese
  • 1/2 cup All Natural Salsa
  • Dried Spices
    • 1 teaspoon ground cumin 
    • 1 tablespoon chili powder
    • 1/2 teaspoon paprika
    • 1 teaspoon black pepper
    • 1 teaspoon sea salt
    • 1/4 teaspoon onion powder
    • 1/4 teaspoon garlic powder
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon cayenne (or to taste)


Hollowed Peppers


Fill em up!

Directions:
  • Preheat oven to 375 degrees F
  • Slice off a very small part of the bottom of the bell pepper to make a flat spot for the pepper to stand on, cut off a generous amount of the stem end of the pepper and then hollow out the peppers. 
  • Then remove seeds and stand the peppers up in a baking dish you've sprayed with non-stick spray and set aside.
  • Chop up the pepper tops along with one onion.
  • Fully cook ground turkey. Add onion, peppers, dried spices, brown rice (optional) in pan and sauté for 10 minutes to blend the flavors and soften the pepper and onion.
  • Fill the hollowed out peppers with ground turkey mix and sprinkle with cheese.
  • Bake for 30 minutes, top with salsa and serve!

Dinner is Served!

Sweet Potato Chips

Baked Sweet Potato Chips

Ingredients:
  • 3 medium sweet potatoes
  • coconut oil or olive oil cooking spray
  • onion powder
  • garlic powder
  • pepper
  • Mrs. Dash Southwest Chipolte

Sweet Potato Peeled and Sliced


Directions:
  • Preheat oven to 425 degrees
  • Line a baking sheet with foil and spray with cooking spray
  • Peel and slice sweet potatoes (1/8 inch to 1/4 inch depending on how think you'd like them)
  • Place on baking sheet in one layer (do not stack)
  • Spray with cooking spray and season to taste
  • Bake for 20-25 minutes until they are at the desired crispness 







Perfect side dish and can be portioned for meals throughout the week. :)

Simple Meal Prep Chicken


Chicken is a staple in our house and meal prepping it for the week is a huge time saver.

Ingredients:

  • 4 chicken breasts
  • 4 tsp Italian Seasoning/Oregano 
  • 4 tsp Salt-free Garlic and Herb Seasoning --- I love Mrs. Dash!
  • Pepper to taste

Directions:
  • Heat oven to 375 degrees and line a baking dish with foil. Coat the bottom with coconut oil spray or olive oil cooking spray. 
  • Place chicken breasts in the pan and cover with plastic wrap. Use a meat mallet to make the chicken breasts about the same thickness. This will help to evenly cook all pieces. 
  • Season both sides of the chicken breast with Italian seasoning or oregano, salt-free garlic and herb seasoning, and pepper to taste. 
  • Cover with foil and bake for 20 minutes. Remove foil cover and continue to bake for 10 minutes.

Portion out in tupperware for lunches or dinners for the week. Add your favorite veggie and brown rice or my tasty Sweet Potato Chips for a super simple meal your whole family will enjoy! :)

Seasoned and ready to throw in the oven!

Spicy Turkey Chili, Crockpot Style!

Are you looking to put a little spice in your weekly meals?? This is the perfect quick dinner option when you get home after a long day. Cook on Sunday and portion it out to save for meals during the week! :)

Crockpot Spicy Turkey Chili (1 cup per serving, makes approximately 8 servings) and it's 21 Day Fix Approved! --> 1 Red, 1/2 Yellow, 1/2 Green


Homemade Chili Seasoning:

  • 4 tsp ground cumin
  • 3 tsp garlic powder
  • 1 tsp ground cayenne 
  • 1 tsp paprika 
  • 2 tsp oregano

Homemade Chili Seasoning
Ingredients:

  • 1 1/2 pounds ground turkey
  • 1 small onion (chopped)
  • 1 green bell pepper (chopped)
  • all natural petite diced tomatoes (2 - 15oz, undrained)
  • black beans (15oz, undrained)
  • 1 tsp  sea salt
  • Homemade Chili Seasoning


Directions:

Cook ground turkey stove top in a skillet and add to crockpot. Mix in onion, pepper, tomatoes, black beans, and chili seasoning. Cook on low for 3 hours. Serve and enjoy!

Committed!

I am committed to my healthy lifestyle.

Sometimes I just need to say it out loud, or in this case write it for whoever actually reads this...I wonder if anyone does read this?? lol

I realize it is only the middle of the week but it has been a doozy. Yesterday's eating was way easier than it has been all week. My cravings are usually not too bad but I've had visions of cupcakes and burritos dancing in my head since Monday. I just keep repeating, "My goals are bigger than my temptations!" and it seems to help.

My workouts are not getting any easier but yesterday I had a huge victory. I have said it before but my upper body strength leaves much to be desired. When I first started this program 4 weeks ago, I could barely do 2 push ups on my toes before I sank into my knees and finished the rest there. I am okay with modifying the moves but I was really hoping that I would gain some upper body strength while pushing myself in this type of workout. Yesterday I was able to do 15 full push ups on my toes for 30 seconds!! I still couldn't make it completely through the last 30 seconds doing half range of motion but I KNOW I will get there!

YAY for push ups!!

A Bit of a Slacker

I really need to stop slacking and write these suckers at night but last night I was just beat.

St. Patrick's Day has always been a fun festive holiday where we got all dolled up in our green and went out partying until the wee hours drinking green cocktails. Things certainly have changed... seeing as how my St. Patty's Day this year consisted a long day at work, and me becoming one with the couch by 9PM.

Although my break room at work was riddled with yummy food yesterday including a Moe's buffet, I think I did pretty darn good. Not to say that I didn't try to get my husband to bring me a few of my favorite things. I can really tell when I haven't had my Shakeo and that 3:30 feeling arrives. It says, "Bring me all the food!" This was mine and my hubby's text exchange during that meltdown phase of my afternoon where I wanted the things I know I shouldn't have. Luckily my husband is supportive and said NO. I tell you though, that burrito and taco spread looked mighty delicious.




On a scale of 1-10, my workout was at about a 8. My body was hating me a little less after what I put it through last week but I was still dragging a bit and didn't put my full effort. I'm sore though so I guess I was doing something right.

Back in the Game!

I am pretty sure my body has now decided to reject my poor food choices. The way I feel afterwards really makes me wonder why I do it in the first place. I may learn eventually ;)

Today's workout was in one word, BRUTAL. My body was dragging and at one point Joe and I looked at the screen and then one another like "really?!?". Some days like today I would really like to stay on the ground after the set of burpees are over but I suppose that wouldn't get me any closer to my goals now would it. I always have to keep reminding myself that you don't quit when you are tired, you quit when you're done.


One thing I like about my job is that my office is about 7 minutes from home. Although one day my office will be 7 feet from my bed and involve endless pairs of yoga pants, but for now 7 minutes is great! It allows me to come home and make my lunch if I want to or unwind for 30 minutes. During lunch today I made myself 2 eggs and a slice of Ezekiel toast. I'm still not sure how but I managed to choke on my toast and scratch the inside of my throat by inhaling it too quickly. Who does that??!
Although, I did not capture any of my fix approved food during the day, I did stay on track. Our dinner, Turkey Meatloaf, was something I threw together during meal prep yesterday and it was amazing-ness. I love having my dinners ready ahead of time. Meal prep is where it's at!

but I assure you it was delicious! 

I guess it's time to get my butt to bed. If there is one down side to doing something you love, it is that you never want to stop, even to catch some zzz's.

Turkey Meatloaf with a Kick

I made a version of the 21 Day Fix Extreme Turkey Meatloaf recipe yesterday when I was meal prepping for the week. I had given turkey meatloaf a shot a few years ago and it was a major fail, so I was skeptical at best that this would come out remotely edible. To my surprise it was delicious!



Mixed!

Ingredients (makes 8 servings):

2 lbs raw 93% lean ground turkey
1 cup all natural medium salsa
1 1/2 cups cooked quinoa cooled
1 tbsp garlic powder
2 large eggs beaten
1 tsp sea salt
2 tsp black pepper
1/2 tsp cayenne pepper to taste for a little kick for my spicy food lovers like me :)









Finished product (half of the loaf)
Directions:

- Preheat the oven to 375 degrees F
- Mix turkey, salsa, quinoa, garlic powder, eggs, sea salt, black pepper and cayenne in a large bowl
- Shape mixture into a loaf in a 13 x 9 inch baking pan or other loaf pan
- Bake for 75 minutes, or until meat is cooked thoroughly 
- Let stand for 15 minutes before serving or portion and freeze in single plastic bags for future meals

There is no real way to make meatloaf "pretty" but I included the photos anyways. ;)

Truth Time!

Let's begin with something positive, shall we?

I was super proud of myself for getting in all, except one of my workouts this week. I am not sure what it is about this program but I find myself wanting to workout every day. So strange for a girl who does not enjoy exercising.

Soo do you remember that treat meal I allowed myself on Monday night after I completed my first round of 21 Day Fix Extreme? Well that ONE treat meal turned into two others this week, along with a few too many pieces of chocolate. Oopsie ;)
Something I have learned through my own personal health and fitness journey is that this is a lifestyle and I am going to indulge from time to time, sometimes more than I should. The difference now is that I won't give up. I just get back up and try again. So that is what I plan to do tomorrow.

I have my meals prepped, my workout clothes laid out, and I am ready to get back at it! We have less than 6 weeks until our first real family vacation, (a cruise where I will inevitably be in a bathing suit for seven days) and I intend to look and feel my best.

My 21 Day Fix Extreme Results and the MOST Delicious Treat Meal!

Today was the day that I got to see how far I had come in the last 3 weeks. These last 21 days have challenged me and given me a sense of accomplishment that I haven't had with any other program I have tried before. I remember the first workout and when I was 5 minutes into it thinking, "Not a chance I can do this!" I'm glad I didn't listen to that negative voice inside my head.

In 21 days I lost 6.8 POUNDS and 14.25 INCHES!!!!!!

My challenge may be over but this is a lifestyle, not a diet or short term quick fix. I decided to continue with this workout program for at least one more round and then will see what program I move onto next. This morning was Plyo Fix Extreme and it kicked my booty!


I knew I had to get it done though so that me and my hunny could enjoy our well deserved treat meal tonight! Cheesecake Factory was good to us. The bread, the wine, my tomato, basil, and cheese flatbread, and some french fries off of Joe's plate were all delicious!

Me and my happy tummy are calling it a night. Looking forward to chaperoning Nathan's field trip to the zoo tomorrow!

Day 21!!! #21DFX

I can't believe today was Day 21 of my 21 Day Fix Extreme Challenge and I am excited to share my results with everyone tomorrow!

This has been great experience that has pushed me and challenged me both physically and mentally. I am so happy I stuck with it! 

Crockpot Turkey Chili!

We spent most of the day relaxing at home and at my parents house. Then it was meal prep time where we made one of our favs, Crockpot Turkey Chili. The house smelled amazing and I really wanted some but I resisted the urge. ;) 
















I tried making my own chili seasoning this time and it turned out fantastic! Never going back to pre-packaged again.

Once we finished off our meal prep we put the kids to bed and got our last workout in. Yoga is still by far my favorite workout! So apparently what I have called a 'backbend' since I was a kid is actually a 'wheel' in yoga world. Tonight Joe was able to hold his up the entire time!

My challenge may be over but you won't catch me slacking. I am looking forward to getting my workout in bright and early tomorrow, just like I have for the last 3 weeks. 
Then I will be looking forward to a well deserved 'treat meal' with my hubby tomorrow night! Cheesecake Factory here we come!! :)

A Road Trip and Day 20!

Setting my alarm on a Saturday morning is a rare occurrence and setting it for 5:30AM just doesn't happen. Except for today... We had a busy day planned so I did just that and it was surprisingly easy. I think my body is getting used to the 5AM thing which is awesome!

I got my workout done, did my Day 19 wrap-up, checked in with my challengers, and packed the kiddos for our road trip all before 8:30AM! I was on a roll!

Then we were off to see my Nana in Spring Hill for the day. It was a great trip there and a wonderful visit. I love seeing her with the great grandbabies. I took a bunch of photos but this one is my favorite. I feel like it is one of those ones that they will look back on one day.

It was a fairly short visit, just for lunch and a quick stop by Nana's house. Then we were back on the road for our 2 hour drive home. The ride home with the kiddos was a bit more dramatic than the ride there. Addi wasn't feeling well and my niece Abigail was also in rare form, meanwhile Joe, my sister Jenn, and I could really have used a glass of wine but instead we just sat there laughing because what can you really do. lol Nathan on the other hand was great, sitting quietly on his iPad playing a game. I came armed with healthy snacks (apples, Shakeo, & almonds) for the road. At lunch I managed to find a yummy grilled chicken salad.

I went for a massage when we got back and hit up good ole Target for some alone time. A strange place to hang out on a Saturday night I suppose, but typically my trips to Target are less than relaxing and usually wind up with one of the kids melting down before we get to the register. So my solo trip tonight felt like a vacation. ;)

Tomorrow marks Day 21 of my challenge and I am excited to get my last workout in before I take my photos, weight and measurements on Monday morning! For now I am off to bed. :)

Successes and Failures. Day 19 - 21 Day Fix Extreme!

So I wasn't sure what to write yesterday which is the reason I am typing this Saturday morning instead of last night like usual.

The whole point of me documenting this journey was to share my successes and failures, honestly and truthfully. I could sit here and write how awesome yesterday was and how I kicked butt, but that wouldn't be accurate.

Up until yesterday, I felt like I had very few failures over the course of the last 19 days, but yesterday was tough.

I woke up not feeling so hot, and mid way through my workout I just stopped. Although I always preach, "listen to your body" to my challengers, it is much harder for me to follow my own advice. So I figured I would finish the workout again last night...well last night came and went and again I really wasn't up for it. So now I will be doubling up today to be sure I get all full 21 workouts in before Monday.

My nutrition yesterday was also not perfect. I ate an extra meal consisting of an extra red (protein) and an extra yellow (I love carbs!). I started my day eating a bit earlier because I thought it would make me feel better after my attempted workout. That's probably the reason I was a bit off on my eating. The hubby and I went on an early dinner date before we picked up the kids from school. My shrimp and roasted tomato didn't make it to a photo because it was gone almost instantly. lol I did remember to take one of my side salad though. ;)

Let's not sit here in "I failed" land for too long because with the struggles I felt yesterday, I also had an AMAZING non-scale victory! I fit into a pair of jeans I haven't been able to get up over my thighs (yes, I am serious) since before I got pregnant with Addi! Those jeans said more than any scale ever will about my progress, and I am so proud of all that I have accomplished in such a short time!

So now it is time to move on and make today a better day! It's Dirty 30 time!

Brownies, Cookies & A Baby Ab!

Today is Day 18 of 21 Day Fix Extreme and this morning I realized I don't drip sweat in any other workout like I do during Lower Fix Extreme. True story, it's gross. haha! My workout buddy kept me going this morning and I think I am starting to see abs!!!

Every few months my mom has an eyeglass frame show at her office and the whole fam attends. They always have food catered including sushi, cookies, cake pops, and wine. So I knew what I was walking in to tonight but I came prepared with my Shakeo and almonds before I arrived. I will admit that the brownies and cookies looked amazing but I am stronger than the frosted deliciousness in front of me.

Pears sprinkled with Cinnamon


I haven't had a pear since I was a kid. Maybe my mom made me eat them a lot or something because I had it in my head that I didnt like them. Well, one of my challengers recommended this snack in one our groups last week and I gave it a shot this afternoon and my, oh my, was it delicious! Pears with cinnamon! I can't believe I have been missing out on pears!!













Tonight I picked up a box of daily inspirations and I am excited to start pulling from those each day. Gotta love Target! :)

Day 17 ALREADY?!! - #21DFX

I deemed this mornings workout a successful one when I only whacked myself in the head twice with the resistance band. #winning

Obviously this was an exaggeration but these things are no joke! I honestly questioned how using just resistance bands and light weights for the most part was going to give me an extreme workout...now I know better.

I can't believe I only have 4 days left of this program! Although, I decided today that I will be continuing Fix Extreme after this first 21 days. This will be after a serious 'treat meal' of course! I am already dreaming of the dinner my hubby and I will be enjoying on Monday night. We contemplated waiting for our date night the following Saturday but realized that we were kidding ourselves if we thought we could wait until then to indulge. ;) 





Yesterday was Day 30 in my 60 day challenge group where our challengers shared their progress pics. I love this part of the group when they get to see how far they have come.

Upper Fix and the Sniffles - Day 16!

The snooze button was my bestie this morning but after 5 minutes I decided I wasn't going back to sleep so I got up and slipped into my workout clothes. Upper Fix was totally welcomed today since it was very little leg work. I powered through it and checked off workout #16!

BREAKFAST!


I got ready for work and sat down for breakfast with the kiddos. We don't get to do that too often because it is always a mad dash to get out the door. So I take advantage every chance I get. My PB & Strawberry Oatmeal was amazing! Nathan opted for grapes and toast. ;)















I struggled throughout the day since I am really not feeling well...as much as I hate to admit it. I am happy I stuck to my nutrition plan even though I didn't feel like eating. Trust me, this is a rare occurrence. I <3 food! I really slacked on my water intake today and I definitely need to do better tomorrow.

So tonight I have a date with the couch, more tea, and The Bachelor episode from last night. Hoping a good nights rest does me some good.

Eeeeek!!!!! Week 2 Results from my 21 Day Fix Extreme Challenge!

Okay, so I told you I cheated a bit yesterday and took some accountability pics. Well today was my official end of Week 2 weigh-in and measurements. I was so shocked that I measured twice because I just couldn't believe how many inches I have lost! lol

Here it goes...

I have lost 6 pounds and 10.25 inches in 14 days! CRAZY right?!

---- andddd my hubby, Joe, has lost a total of 7.4 pounds since Day 1!!


I am soo proud of myself (&Joe) for sticking with this! Trust me when I tell you I wanted pizza and all things smothered in cheese this weekend just like everyone else. This takes commitment and discipline.

When you commit to eating well, and exercising daily, you WILL see results! Every day is not going to be easy but think of how accomplished you will feel when you reach your goals.

My nutrition stayed on track today despite a busy Monday at the office and not feeling 100%.

I enjoyed my yummy chicken chili for dinner tonight and it was so good I practically licked the bowl...I promise I didn't actually lick it, although I did contemplate it. ;)












It's almost time to log in to our Team Beachbody call and I'm relaxing on my porch sipping on some tea, hoping it will help my body fight off this illness that seems to be trying to take me over.  Positive vibes my way would be appreciated. I am determined to finish this week strong!

A Confession & Day 14 Wrap-up!

After yesterdays late night workout, I decided to squeeze in Yoga Fix Extreme in the afternoon. It is an active recovery day and all of that stretching and balance work was just what I needed after this week. I still can't believe tomorrow is the start of my 3rd and final week of my 21 Day Fix Extreme challenge!

In one of my earlier posts I had said I wasn't taking any accountability photos or progress pics until after I hit the 21 day mark. Well today I opened my next 21 Day Fix and Fix Extreme Challenge Group and I was too excited about my progress not to share with my challengers what they were in for! Soo I took Day 14 photos! Let me just say I can't believe the difference already!

We were super productive today! I feel so good about going into Monday when I have my act together by Sunday night. It was a gorgeous day so we spent some time outside and took a walk around the neighborhood. During our daughters afternoon nap we meal prepped and cleaned the house.  I tried out a new recipe tonight out of the 21 Day Fix Extreme nutrition plan, Chicken Chili. I made it for our dinners for the next few days but I did have a taste and it was delicious!
